Combine bread crumbs, macadamia nuts and salt together on a plate set aside. Dip chicken in egg coat with bread crumb mixture. Brown both sides in butter and oil in a skillet over medium-high heat reduce heat to low and cover. Heat until juices run clear when chicken is pierced with a fork, about 5 to 7 minutes.
TIP: Flatten chicken between wax paper using a rolling pin and a little muscle...just toss the paper and there's no mess!
