Chili Relleno Squares

Ingredients

1 (7-ounce) can whole or diced chilis, drained
1 (12-ounce) package shredded Colby cheese
1 (12-ounce) package shredded Monterey Jack cheese
4 eggs, beaten
1 (12-ounce) can evaporated milk
2 tablespoons all-purpose flour
1 (16-ounce) jar red or green salsa

Directions:

Spread chiles in the bottom of a greased 13"x9" baking pan. Mix cheeses together and spread over chiles. In a separate bowl, whisk together eggs, evaporated milk and flour; pour over cheeses. Bake at 375 degrees for 30 minutes, or until top is golden. Spread salsa over top and bake an additional 5 to 10 minutes.


Adding a splash of ginger ale to orange, cranberry and apple juice makes them extra-special for holiday mornings.
