That Good Salad

Toss together this simple salad recipe whenever dinner needs a super quick side of greens. Bright, crunchy and refreshing, the simple green salad will complete any meal.

Ingredients:
3/4 cup canola oil
1/4 cup lemon juice
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
2 bunches (1 pound each) romaine, torn
2 cups chopped tomatoes
1 cup shredded Swiss cheese
2/3 cup slivered almonds, toasted, optional
1/2 cup grated Parmesan cheese
8 bacon strips, cooked and crumbled
1 cup Caesar salad croutons

Directions:
In a jar with a tight-fitting lid, combine the canola oil, lemon juice, garlic, salt and pepper. Screw the lid back on tightly and shake everything together well. Chill the dressing in the fridge while you assemble the salad.

In a large serving bowl, add the romaine, tomatoes, Swiss cheese, almonds, Parmesan cheese and crumbled bacon. Toss together until everything is evenly dispersed.

The dressing might have separated a bit in the fridge (totally normal!) so give the dressing another really good shake. Pour the dressing all over the salad and toss everything together. Scatter the croutons on top and serve the simple green salad immediately.
