Our favorite salad with avocado features juicy tomatoes, toasted walnuts, red onions, creamy avocados and spring mix tossed with a zesty lime dressing. Made in only 25 minutes, it’s the perfect quick side dish or light lunch.

1 tablespoon lemon juice
2 medium avocados, peeled and cubed
1 package (5 ounces) spring mix salad greens
5 plum tomatoes, chopped
1/2 cup chopped red onions
1/4 cup chopped walnuts, toasted
lime DRESSING:
3 tablespoons olive oil
1 tablespoon minced fresh parsley
1 tablespoon minced fresh cilantro
1 tablespoon sour cream
1 tablespoon lime juice
1 teaspoon yellow mustard
1/8 teaspoon salt
1/8 teaspoon pepper
Dash sugar
Directions:
Drizzle the lemon juice over the avocados. Editor’s Tip: Let the avocados sit in the lemon juice for a few minutes to soak up even more tangy flavor.
In a serving bowl, combine the salad greens, tomatoes, onion, walnuts and avocados.
In a small bowl, whisk together the olive oil, parsley, cilantro, sour cream, lime juice, mustard, salt, pepper and sugar.
