Winter Pear Salad with Meyer Lemon Vinaigrette
I discovered the magic of Meyer lemons just last year but by the time I found out about it, I couldnâ€™t find them anywhere! So as soon as they were in season late December, I got a huge Costco-sized box of Meyer lemons. Iâ€™ve made so many things with these lemons but my most favorite â€¦
Total Time: 10 minutes
|4 cups||mixed baby greens|
|1/4 cup||crumbled goat cheese|
|2 tablespoons||dried cranberries|
|1||pear, thinly sliced|
|1/4 cup||olive oil|
|1/4 cup||meyer lemon juice|
|1||zest of 1 meyer lemon|
To make the vinaigrette, whisk together olive oil, Meyer lemon juice and zest and sugar in a small bowl; set aside.
To assemble the salad, place baby greens in a large bowl; top with the goat cheese, walnuts and dried cranberries. Pour the dressing on top of the salad and gently toss to combine. Serve immediately topped with sliced pear.
