- Reserve extra mint leaves for tomorrow and Wednesday night (store in fridge)
- Use some of the mint leaves from last night
- Zucchini is used in both the soup and salad tonight; Slice extra zucchini and peppers to use Thursday night (store in fridge)
- Store extra feta to use Thursday night
- Carrots are used in both soup and as side dish tonight
- Use remaining mint for baked apples
- Grilled Zucchini Pizza with Goat Cheese
- Fresh Fruit Salad with Honey Vanilla Yogurt
- Meringue Cookies ("Forgotten Kisses")
- Use leftover zucchini and bell peppers tonight
- Use remaining feta
