Spinach Feta Florentine Chicken
2 - 3 boneless skinless chicken breasts
4 ounces baby spinach (about half of the bag)
2 roma tomatoes, sliced
4 mushrooms, sliced without the stems
4 ounces feta cheese
2 tablespoons extra virgin olive oil or 8 ounces of your favorite vinaigrette dressing (it can be greek, caesar anything you prefer)
2. Pound Chicken breasts to thin and tenderize.
3. In a greased square baking dish layer Spinach, Chicken, Mushrooms, Tomatoes and then Feta Cheese.
4. Drizzle either the Extra Virgin Olive Oil or the dressing over everything.
5. Bake in the oven for 30 minutes uncovered.
