Italian Turkey Sausage and Noodles

Serves 15

2 medium size white onions
1 medium size red bell pepper
1 medium size orange or yellow bell pepper
1 can diced tomato italian style
1 (14-ounce) package smoked turkey sausage (I use Eckrich)
1 (12-ounce) package whole wheat, whole grain wide egg noodle

Slice and/or dice the onions and peppers and sautee in a deep pan with a little olive oil until soft. Slice the turkey sausage into rounds and add to mixture. Add the can of tomatoes cover and turn temp down. This will continue to simmer and warm through while the noodles cook. Prepare a pot of boiling water and add the noodles when ready. Boil for indicated time or until desired tenderness. In a large bowl combine the mixture and noodles and stir till well mixed. This will make 15 cups of mixture. The nutrition facts do not include any additionally added olive oil or sour cream.
