Sweet Potato Fries

Serves 4


2 tablespoons firmly packed brown sugar
1/2 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/8 teaspoon ground allspice
4 medium sweet potatoes
2 tablespoons margarine, melted
2 tablespoons canola oil

Preheat oven to 425°. Spray 15x10 inch jelly roll pan with vegetable cooking spray. In a small bowl, combine first six ingredients. Mix well. Set aside. Cut potatoes lengthwise into strips about 1/2 thick and 3 inches long. Place potatoes in a large self-sealing plastic bag. Drizzle with margarine and oil; seal and toss to coat potatoes evenly. Arrange potatoes in single layer on jelly roll pan. Bake, turning several times, until tender and lightly browned, about 20 to 25 minutes. Sprinkle potatoes with sugar mixture. Bake for 5 more minutes. Serve immediately.
