Louisiana Sloppy Joes

Ingredients

Basic Biscuits
1 medium onion diced (1 1/2 cups)
3 cloves garlic minced
1 medium green bell pepper diced (1 1/2 cups)
1 1/2 pounds ground beef
2 tablespoons red wine vinegar
1 (16-ounce) can tomato paste
1 cup water
1 tablespoon honey
2 tablespoons Dijon style mustard
1 tablespoon chili powder
1 teaspoon sweet paprika
1/2 teaspoon cumin
1 teaspoon oregano
2 bay leaves
1/2 teaspoon salt
pepper

Directions:

Cook onion, garlic, bell pepper, and ground beef in large pan over medium-high heat. Use a wooden spoon to break up the meat. Cook about 5 minutes, until the meat is no longer pink. Add the red wine vinegar and stir a couple of times. Add the rest of the ingredients. Reduce heat to low and simmer, loosely covered, about 30 minutes more, stir - ring occasionally. Meanwhile, make Basic Biscuits. When ready, place 2 or 3 biscuits on a plate, spoon sloppy joe mixture over top so that they are covered completely, and eat. This is great with a very simple green salad.
