Ingredients

2 tablespoons olive oil
1 cup canned artichoke quarters, drained
4 eggs, beaten
1/2 teaspoon salt

Directions:

Heat olive oil in a skillet over medium heat. Cook artichokes, stirring frequently, for 8 to 10 minutes, until golden. Spread artichokes in a buttered one-quart casserole dish. Whisk together eggs and salt until frothy; pour over artichokes. Bake, uncovered, at 400 degrees for 15 minutes, or until firm. Cut into wedges; serve immediately.
