Place squash halves cut-side down on a lightly oiled baking sheet. Bake at 350 degrees for 30 minutes; cool slightly. In a skillet over medium heat, sauté onion and garlic in olive oils until tender. Transfer onion mixture to a large bowl; mix with tomatoes, olives and cheese. Pull out cooked squash strands with a fork and add to bowl. Drizzle with balsamic vinegar; add salt to taste and toss to mix. Garnish with a sprinkle of basil.
