Stuffed Zucchini

Ingredients

FOR THE STUFFING:
1 tablespoon extra-virgin olive oil
2 tablespoons finely chopped red onions
1/4 teaspoon minced garlic
1/2 cup dried bread crumbs
1/2 cup grated mozzarella cheese
1 tablespoon finely chopped fresh mint leaves
1/2 teaspoon kosher salt

4 medium zucchini, trimmed and cut in half lengthwise
extra-virgin olive oil

1/4 cup freshly grated Parmesan cheese (Parmigiano-Reggiano)

Directions:

TO MAKE THE STUFFING: In a medium sauté pan over medium-high heat, warm the olive oil and cook the onion, stirring occasionally, until tender, 4 to 5 minutes. Add the garlic and cook for 1 minute more, stirring occasionally. Add the bread crumbs and continue to cook, stirring occasionally, until light golden brown, about 2 minutes. Transfer to a medium bowl. Add the remaining stuffing ingredients and mix well.

Lightly brush or spray the zucchini all over with olive oil. Grill, skin side down, over Direct Medium heat for 6 minutes, turning once halfway through grilling time. Remove from the grill and allow to cool slightly.

Using the tip of a teaspoon, scoop out the partially cooked centers of the zucchini to within 1/4 inch of the skin. Finely chop the zucchini centers. Mix the chopped zucchini with the stuffing ingredients. Carefully spoon the stuffing into the zucchini shells, mounding slightly. Sprinkle the tops lightly with the cheese.

Grill the stuffed zucchini, skin side down, over Direct Medium heat until the stuffing is heated through, about 3 minutes. Serve warm.
