Ice Cream Sandwiches

Ingredients

2 cups all-purpose flour
3/4 cup unsweetened baking cocoa
1 teaspoon baking soda
1/2 teaspoon kosher salt
1 1/4 cups unsalted butter, softened
2 cups granulated sugar
2 teaspoons pure vanilla extract
2 large eggs

2 quarts vanilla ice cream

Directions:

In a medium bowl combine the flour, cocoa, baking soda, and salt. Stir to blend, then sift together onto a piece of waxed paper.

In a large bowl beat the butter, sugar and vanilla until evenly blended. Add the eggs one at a time, beating thoroughly after each addition. (It's okay if the mixture looks curdled at this point.) Add the sifted dry ingredients and stir vigorously until completely mixed. Cover the bowl with plastic wrap and refrigerate for about 1 hour.

Place the dough on a work surface and divide it in half. Roll each half into a log 1 1/2 to 2 inches in diameter. Use the dough right away or wrap in plastic wrap and refrigerate for up to 1 week. For longer storage, freeze up to 1 month, then thaw overnight in the refrigerator before baking.

Preheat oven to 350°F. Grease cookie sheets or line with baking parchment paper. Using a sharp knife, cut the chilled dough into 1/3 inch rounds you will get 18 to 20 slices from each log. Place the rounds about 2 inches apart on the cookie sheets. Bake 10 to 11 minutes the cookies will spread and puff as they bake, then flatten as they cool. Allow to cool 1 to 2 minutes before transferring to racks to cool completely.

Meanwhile, place the ice cream in the refrigerator for 10 to 20 minutes so it softens slightly.

Place a scoop (1/3 to 1/2 cup) of ice cream in the middle of a cookie. Top with another cookie and gently press down just until the ice cream oozes to the cookie's edges. Sandwich the other cookies and ice cream in the same way. Place the sandwiches in a single layer on a baking sheet and set in the freezer for about 1 hour. Once frozen, wrap individually in plastic wrap and return to the freezer until ready to serve.
