Tipton Family Spaghetti Sauce

1/2 bushel or 30 pounds tomatoes, peeled and seeded
3 pounds onions, chopped
1 to 2 cup oil
1/2 cup sugar
1/2 cup canning salt
2 tablespoons dried oregano
2 tablespoons dried basil
Optional: garlic and sweet & hot peppers to taste
4 (12-ounce) cans tomato paste
10 (1-quart) canning jars and lids, sterilized


In a large stockpot mix together all ingredients, except tomato paste. Bring to a boil over medium heat. Reduce heat to low; simmer for one hour. Add tomato paste; bring to a boil. Spoon into jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 40 minutes. Set jars on a wire rack to cool; check for seals.

Tip: Give a jar of homemade spaghetti sauce with a glass pantry jar filled with spaghetti, or layer different shapes & sizes of noodles like wagon wheels, rotini, elbow macaroni and shells. What fun!
