Gooseberry Jam

Ingredients

2 quarts gooseberries, hulled and chopped
6 cups sugar
1 (1 3/4-ounce) package powdered pectin
7 (1/2-pint) canning jars and lids sterilized

Directions:

Place berries in a large saucepan over medium heat. Add sugar; mix well. Bring to a full rolling boil over medium heat; boil one minute, stirring constantly. Remove from heat; stir in pectin. Skim off foam. Spoon into hot sterilized jars, leaving 1/4-inch headspace. Wipe rims; secure with lids and rings. Process in a boiling water bath for 15 minutes; set jars on a towel to cool. Check for seals.
