Homemade Apple Pie Filling

Ingredients

4 cups sugar
1 3/4 cups cornstarch
3 1/2 teaspoons cinnamon
1/2 teaspoon nutmeg
3 1/2 teaspoons salt
2 1/2 quarts water
1/4 cup lemon juice
10 pounds tart apples, cored, peeled and sliced into wedges
4 (1-quart) canning jars and lids, sterilized

Directions:

In a stockpot, mix sugar, cornstarch, spices and salt together. Add water; mix well. Bring to a boil over medium heat; cook until thick and bubbly, stirring frequently. Remove from heat; add lemon juice and set aside. Pack apples into hot, sterilized jars. Pour syrup over apples, leaving 1/2-inch headspace. Draw a non-metallic knife through contents of each jar to remove air bubbles. Wipe rims; secure with lids and rings. Process in a boiling water bath for 10 minutes. Set jars on a towel to cool; check for seals.
