Freezer Zucchini Pickles

Ingredients

7 cups zucchini, thinly sliced
2 onions, sliced
1 green pepper, chopped
1 teaspoon celery seed
1 teaspoon salt
2 cups sugar
1 cup cider vinegar
7 pints (1-pint) freezer-safe plastic containers, sterilized

Directions:

Combine all ingredients except sugar and vinegar in a large bowl. In a separate bowl, mix together sugar and vinegar; stir until sugar dissolves. Add to zucchini mixture; toss to blend. Refrigerate for 24 hours. Spoon into freezer-safe containers.

Tip: Quick & easy to make, freezer jams and pickles will stay fresh for one year. If you choose to refrigerate them, use within 3 weeks.
