Pear Custard Pie

Ingredients

FILLING
2 1/2 to 3 cups fresh or canned, drained sliced pears
1 1/4 cups low fat cottage cheese
1/3 cup soy milk or milk
1 large egg
1 teaspoon vanilla extract
1/2 teaspoon powdered stevia extract
2 tablespoons flour
pinch salt
TOPPING
1/2 cup whole wheat flour
1 teaspoon cinnamon
1 tablespoon butter
3/4 teaspoon stevia concentrate

Directions:

• Preheat the oven to 350°F. Prepare a 9-inch single pie crust. Prick the crust with a fork a number of times, and bake for 15 minutes. Remove from the oven.
• Lay the pear slices in the pie shell. Blend the remaining ingredients together in a blender until smooth. Pour the blended mixture over the pears. Bake for 30 to 40 minutes. Remove from the oven.
• Raise the oven temperature to 400°F.
• Place the flour in a small bowl. Stir in the cinnamon. Mix in the butter then the stevia concentrate until well distributed. Sprinkle evenly over the top of the pie. Return to the oven and bake for 10 to 15 minutes longer.
• Chill before serving.
