Crepes

Ingredients

2 large eggs
1 cup soy milk or milk
scant 3/4 cup whole wheat pastry flour
2 teaspoons canola oil
dash salt
pinch powdered stevia extract

Directions:

• Blend all the ingredients together in a blender on low. If the mixture is frothy, let it sit covered in the blender for 5 to 10 minutes.
• Pour approximately 1/4 cup of the batter at a time into a 7 or 8-inch, heated, lightly oiled, heavy-bottomed frying pan. A nonstick pan works well. Tilt the pan until the batter reaches all sides. When the bottom is lightly browned, flip the crepe and lightly brown the other side. Crepes are best when thin.
• Serve filled with Apple or Pear Filling or Plum Sauce and rolled up.
