Lemon Cabbage Soup

Ingredients

2 tablespoons chopped garlic
1 teaspoon olive oil
5 cups water
3 cups finely chopped potatoes
4 cups finely chopped cabbage
1/2 pound firm tofu cut into 1/4 inch cubes
1 teaspoon thyme
2/3 cup lemon juice
1/4 cup liquid aminos or soy sauce

Directions:

In a soup pot, sauté the garlic in the oil.

Add the water and potatoes, and bring to a boil. Cook for 5 minutes.

Add the cabbage, tofu, and thyme, and return to a boil. Lower the heat and simmer for 5 minutes.

Add the lemon juice and liquid aminos. Simmer a few more minutes, and serve.
