Cauliflower Parsley Soup

Ingredients

6 cups water
1 head cauliflower broken into bite sized pieces (4-5 cups)
1 1/2 cups chopped celery
1 cup chopped scallion
1 cup chopped fresh parsley
1/4 cup unbleached flour
1/4 cup water
1/4 teaspoon grated nutmeg
1/2 teaspoon salt

Directions:

Bring the water and cauliflower to a boil, lower the heat, and simmer for 3 minutes.

Add the celery, scallions, and parsley, and simmer for 5 more minutes.

Make a paste from the flour and water, and add it to the soup. Add the nutmeg and salt, and simmer for 5 minutes. Remove from the heat and cover until ready to serve.
