Shiitake Soybean Soup

Yield: 14 cups

Ingredients

2 cups chopped green onions
4 cups chopped fresh shiitake mushrooms
2 teaspoons canola oil
7 cups water
4 cups chopped kale, collards, Swiss chard, or spinach
3 cups cooked soybeans
3 cups cooked rice
2 teaspoons garam masala*
1 tablespoon Jamaican curry**
1/3 cup soy sauce
1 teaspoon toasted sesame oil

Directions:

In a large soup pot, sauté the green onions and shiitakes in the canola oil until they are soft and a thick, saucy stock has developed.

Add the water and greens, and bring to a boil. Lower the heat and simmer for 10 minutes.

Add the soybeans, rice, spices, and soy sauce. Return to an active simmer, and cook for 5 minutes. Remove from the heat.

Add the sesame oil, mix well, and cover until ready to serve.

*Garam masala is a sweet spice mix. It can be purchased already mixed or you can make your own by using equal amounts of cinnamon, cloves, and cardamom.
**Jamaican curry is a mix of turmeric, fenugreek, coriander, cumin, anise, star anise, pepper, pimento, cloves, and garlic.
