Place the peach nectar, peach, raspberries, and gelato in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Spoon the Raspberry Sauce, if using, in the bottom of a glass and add the smoothie. Garnish with Berries on a Skewer (see Great Garnishes) or top with crumbled amaretti cookies, if desired.
