Caramelized Pineapple with Pralines and Cream Ice Cream

It’s well worth the few minutes it takes to broil the pineapple before adding it to this heavenly smoothie. You’ll adore the sensational taste of caramelized brown sugar in this tropical delight.

   1/4 cup firmly packed dark brown sugar
   1 teaspoon ground cinnamon
   1 1/2 cups pineapple chunks
   2/3 to 3/4 cup pineapple juice
   1 teaspoon honey
   1/2 cup pralines and cream ice cream

Preheat the oven broiler. Line a baking sheet with freezer paper. Set aside.

Combine the brown sugar and cinnamon in a small bowl and blend well. Place the pineapple in a single layer in a broilerproof pan and sprinkle with the brown sugar mixture. Place the pan under the broiler and broil for 3 to 6 minutes, or until the brown sugar just begins to caramelize. Watch carefully to be sure the pineapple doesn’t burn. Remove the pan from the oven and place it on a cooling rack. When the pineapple mixture is cool, transfer it to the prepared baking sheet and freeze for 1 hour or more.

When you are ready to make the smoothie, place the pineapple juice, honey, pineapple mixture, and ice cream in a blender and mix by using the on/off pulse function until the ingredients are mostly blended. Continue mixing, gradually increasing the speed, until the mixture is smooth. Pour the smoothie into a glass and garnish with a Cinnamon-Dipped Tortilla Triangle (see Great Garnishes), if desired.
