Caramel Miranda Apple Smoothie

Ingredients

CARAMELIZED APPLES:
1 1/2 tablespoons unsalted butter
3 cups peeled and diced Granny Smith apples (3 large apples)
6 tablespoons granulated sugar
3 tablespoons Calvados, or other apple liqueur

SMOOTHIE:
1/4 cup lowfat milk
Caramelized Apples
1 1/2 cups vanilla fat-free frozen yogurt
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1/8 teaspoon allspice

Directions:

TO MAKE THE CARAMELIZED APPLES
Melt the butter in a medium nonstick pan over medium-high heat. Add the apples and sugar and sauté for 5 to 7 minutes or until the mixture begins to caramelize, stirring frequently. Add the apple liqueur and boil for 40 seconds. Allow the apples to cool in the pan. Transfer the apples to a plate lined with plastic wrap and place in the freezer for 1 hour.

TO MAKE THE SMOOTHIE
Place the milk, caramelized apples, yogurt, nutmeg, cinnamon, and allspice in a blender, and mix on low speed until the mixture is blended. Continue to mix, gradually increasing the speed, until the mixture is smooth. Pour into champagne flutes and garnish each by inserting a 6-inch cinnamon stick upright in the smoothie, if desired.
