Pork Sausage Casserole

Ingredients

1 pound bulk Italian sausage
1 envelope onion soup mix
1 cup long grain converted rice uncooked
2 stalks celery diced
1/3 cup slivered almonds
4 cups water
1/2 teaspoon salt

Directions:

Combine all ingredients in greased 3 1/2 to 5-quart slow cooker and stir well. Cover and cook on high heat for 3-4 hours or on low heat for 7-9 hours, until rice is tender. Do not overcook. Makes 2-4 servings.

Serve with a fresh saute of swiss chard or baby spinach, red onion, and crumbled bacon. Season with balsamic vinegar.
