Salzburger Nockerl a la White House

6 egg whites, beaten
powdered sugar
4 egg yolk
1/2 cup flour
1 teaspoon vanilla sugar


To 1/2 cup of powdered sugar, add beaten egg whites. Beat until stiff but not dry. Add the egg yolks, flour, and vanilla sugar and mix gently. Shape dough into 4 large balls (nockerl). Fry in hot lard, turning frequently until golden brown. Sprinkle with powdered sugar.

Author’s note: To make vanilla sugar, split pieces of vanilla bean. Remove the seeds and crush them into 1 teaspoon sugar.
