Zucchini Squares

Ingredients

4 eggs, slightly beaten
1/2 teaspoon seasoned salt
1/2 teaspoon dried oregano (rubbed between palms of your hands)
1/2 cup vegetable oil
1/2 cup chopped onion
1/2 cup grated Parmesan cheese
2 tablespoons snipped parsley
1 cup Bisquick baking mix
4 cups thinly sliced, unpared zucchini

Directions:

Beat eggs with seasonings; stir in oil. Mix with all remaining ingredients, adding zucchini last. Bake in greased 9x13-inch dish, 350° for 35 minutes, or until a cake tester or toothpick comes out clean. It should be golden brown. Slice in small squares to serve. This will keep several days, refrigerated, and can be reheated in the microwave.
