Bacon Onion Cheesecake

Ingredients

2/3 cup stone-ground wheat cracker crumbs
1/3 cup finely chopped walnuts
2 tablespoons butter, softened
8 slices bacon
1/2 cup chopped onion
1 tablespoon bacon drippings
3 (8-ounce) packages cream cheese, softened
3 eggs, beaten
1/4 teaspoon garlic powder
1/2 teaspoon cayenne pepper

Directions:

Press crumbs evenly in bottom of springform pan. Bake in preheated 350° oven for 10 minutes. Cool on rack.

Fry bacon until crisp, reserving drippings, then crumble. Sauté onion in drippings until tender and set aside. Beat cream cheese. Gradually add eggs, garlic powder, and cayenne. Beat until smooth. Stir in bacon and onion. Spoon mixture into pan. Spread level. Bake 45–60 minutes or until cheesecake is almost set and cracks on top. Cool completely. Store in refrigerator covered with plastic wrap. Just before serving at room temperature, remove sides of pan. Serve with crackers or carrot slices.


Fun Fact: The Seven Wonders of the Ancient World
The historian Herodotus (ca.484–425 BCE), and the scholar Callimachus of Cyrene at the Museum of Alexandria (ca. 305–240 BCE) made early lists of seven wonders but their writings have not survived, except as references. The seven wonders included:

1. Great Pyramid of Giza – Egypt
2. Hanging Gardens of Babylon – Babylon, Present Day Iraq
3. Statue of Zeus at Olympia – Greece
4. Temple of Artemis at Ephesus – Turkey
5. Mausoleum of Maussollos at Halicarnassus – Turkey
6. Colossus of Rhodes – Greece
7. Lighthouse of Alexandria – Egypt

The earliest lists had the Ishtar Gate as the seventh wonder of the world instead of the Lighthouse (sometimes called Pharos) of Alexandria.

The list known today was compiled in the Middle Ages, by which time many of the sites were no longer in existence. Today, the only ancient world wonder that still exists is the Great Pyramid of Giza.
