Pound chicken breasts to 1/4-inch thickness. Sauté mushrooms in butter and mix with cheese. Place mixture on each chicken breast and fold in half. Secure with wooden toothpick. Place in freezer until firm, about 20 minutes. Dip in eggs, then in a mixture of flour, salt, pepper and paprika. Dip in a mixture of bread crumbs and Swiss cheese. Sauté in butter in a skillet until lightly browned on all sides. Place in a buttered shallow casserole dish and bake at 325° for 20–30 minutes. Do not overcook.
