Cheesy Tomato Basil Chicken Breasts

Ingredients

Sauce:
1/2 teaspoon salt
2 cups cubed tomatoes
1/3 cup chopped onion
1 (6-ounce) can tomato paste
1/4 teaspoon pepper
2 teaspoons minced fresh garlic
1 tablespoon basil leaves
3 tablespoons butter
3 whole chicken breasts, skinned and cut in half

Topping:
1 cup fresh bread crumbs
1/4 cup chopped fresh parsley
2 tablespoons melted butter
6 ounces mozzarella cheese, cut into strips

Directions:

Sauce:
In medium bowl, mix Sauce ingredients; set aside.

Heat oven to 350°. In 9x13-inch baking pan, melt 3 tablespoons butter in oven. Place chicken in baking pan, turning to coat with butter. Spoon Sauce over chicken. Bake for 30–40 minutes or until chicken is no longer pink.

Topping:
Stir together all Topping ingredients except cheese. Place cheese strips over chicken; sprinkle with Topping mixture. Continue baking 5–10 minutes or until chicken is fork-tender and bread crumbs are browned.
