Chicken with Marinated Artichoke Hearts

2 (2 1/2- to 3-pound) chicken
2 medium onions, sliced thin
1 pound mushrooms, sliced
1 stick butter
3 (14-ounce) jars marinated artichoke hearts, drained (reserve oil from 1 1/2 jars)
1/2 - 1 cup dry sherry
1/2 cup flour
1 (10 3/4-ounce) can cream of chicken soup or mushroom soup


Skin and cut up chicken. Sauté onions and mushrooms in butter. Stir in artichoke hearts. Place chicken pieces in greased casserole and cover with onion mixture. Mix together artichoke oil, sherry, flour, and soup, and pour over top. Bake at 350° for 45–60 minutes. May be prepared the night before.

Editor's Extra: To avoid lumps when mixing flour with liquid, use a whisk, or shake in a jar.
