Drain the marinade from the artichoke hearts, and chop them well. Add onion and garlic. Sauté until onion is limp, but not browned. Beat eggs well. Add bread crumbs, salt, pepper, oregano, and a couple of drops of Tabasco—or more if you’re brave. Stir in the Cheddar, parsley, and artichoke and onion mixture.
Bake in a lightly greased 7x11-inch or 8x8-inch pan at 350° for 30 minutes. Serve with any kind of cracker or pita.
