Fruit and Cheese Pizza

Ingredients

1 (20-ounce) package refrigerated slice-and-bake sugar cookie dough
1 1/2 (8-ounce) packages cream cheese, softened
1/3 cup plus 2 tablespoons sugar
3 tablespoons brandy or orange juice, divided
1 teaspoon vanilla extract
4 cups (more or less) thinly sliced fruit
5 1/2 (8-ounce) packages fruit
1/4 cup berries
1/2 cup fruit preserves (any flavor)

Directions:

Preheat oven to 375°. Lightly spray a 14-inch pizza pan with vegetable spray. Cut cookie dough into 1?4-inch thick rounds. Arrange in slightly overlapping pattern on prepared pan, covering pan completely. (Flour your hands before you start working with the dough to make this all go much easier.) Press dough together to seal. Make a ridge on edges of crust with your fingers (to hold the filling). Bake until puffed and golden, about 10 minutes. Cool completely.

Combine cream cheese, sugar, 1 tablespoon brandy, and vanilla in bowl. Spread evenly over crust. Arrange fruit in circular pattern over filling. Put berries in center. Melt preserves with remaining 2 tablespoons brandy in small saucepan over low heat. Brush over fruit. Chill for at least an hour before serving.
