Coconut Chews

Ingredients

3/4 cup shortening (or half butter or margarine, softened)
3/4 cup powdered sugar
1 1/2 cups plus 2 tablespoons all-purpose flour, divided
2 eggs
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1/2 cup chopped walnuts
1/2 cup flaked coconut

Orange-Lemon Icing:
1 1/2 cups powdered sugar
2 tablespoons butter or margarine, melted
3 tablespoons orange juice
3 teaspoons lemon juice

Directions:

Heat oven to 350°. Cream shortening and powdered sugar. Blend in 1 1/2 cups flour. Press evenly in bottom of ungreased 9x13x2-inch baking pan. Bake 12–15 minutes.

Mix remaining ingredients, including remaining 2 tablespoons flour; spread over hot baked layer, and bake 20 minutes longer. While warm, spread with Orange-Lemon Icing. Cool. Cut into bars.

For Orange-Lemon Icing:
Mix until smooth and of spreading consistency.


Nuts are often interchangeable—especially walnuts and pecans—and can generally be used according to taste, and what you have on hand.
