sweet orange cream sauce

Yield: 1 1/2 cups

Ingredients

1 cup soaked cashews (see Raw Basics chpater)
3/4 cup freshly squeezed orange juice
2 tablespoons agave nectar or maple syrup

Directions:

Equipment:
measuring cups
citrus juicer or reamer
measuring spoons
blender
rubber spatula

Put all the ingredients in a blender and process on high speed until smooth. Cover and refrigerate for at least 30 minutes before serving. Stored in a sealed container in the refrigerator, Sweet Orange Cream Sauce will keep for 3 days.

Sweet Lemon Cream Sauce: Replace the orange juice with 1/4 cup of freshly squeezed lemon juice and add 1/2 cup of water.
