1/2 cup chopped onion
salt and pepper to taste
4 eggs, beaten
1 cup cubed cooked* ham
4 slices Velveeta or Cheddar cheese

In a separate bowl, add salt and pepper to eggs, then pour over potatoes, covering completely. Lay ham, cheese, and mushrooms over half the mixture. Cover and cook over medium-low heat 7–8 minutes, or until eggs are done and cheese is melted. With a spatula, fold omelet in half. Cut into wedges for individual servings. Makes 2–3 servings.

* Slices of ham lunch meat may be substituted.
