Smoked Sausage-Egg Skillet

Ingredients

2 tablespoons vegetable or olive oil
2 cups frozen hash brown potatoes, southern style (cubed)
8 to 10 little smoked sausages, quartered
5 eggs
2 tablespoons milk
1/4 teaspoon pepper
1 teaspoon mustard, optional
1/2 cup grated Cheddar cheese

Directions:

Heat oil on medium-high heat in a large frying pan. Add hash browns and sausage to oil. Cook 5–7 minutes, turning potatoes 2 to 3 times until golden.

In a bowl, whisk eggs, milk, pepper, and mustard, if desired. Pour mixture over cooked potatoes. Cover and cook an additional 7–8 minutes over medium-low heat, or until eggs are completely cooked. Sprinkle cheese over top. Cut into wedges and serve.Makes 4–6 servings.
