Hearty Turkey Brunch Skillet

Ingredients

1/2 cup chopped onion
1/2 cup diced green bell pepper
1 (14 1/2-ounce) can diced new potatoes, drained
1 to 2 tablespoon vegetable or olive oil
1 cup diced cooked turkey breast tenderloin
6 eggs, beaten

Directions:

In a large frying pan, saute onion, pepper, and potatoes in hot oil until tender. Stir in turkey. Pour eggs over top. Cover and simmer on low heat until eggs are done. Cut into wedges and serve. Makes 3–4 servings.

VARIATION: Make a scrambled egg skillet. Once eggs are added, stir until done.
