Green Chile-Cheese Cornbread

Ingredients

1/2 cup canola oil, divided
1 cup yellow cornmeal
1 cup unbleached white flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon salt
1 cup buttermilk
1 egg
1 (4-ounce) can green chili, chopped
1 cup whole-kernel corn, cut off the cob or frozen
1 cup grated Cheddar cheese

Directions:

Preheat the oven to 400°. Pour 1/4 cup of oil into a 10-inch cast-iron skillet and place in the oven to heat. Combine dry ingredients in a bowl and stir. Add milk, remaining 1/4 cup oil, egg, chiles, corn, and cheese; mix well. Pour batter into heated skillet and reduce oven heat to 375°. Bake for 30 minutes until golden brown and done in the center.
