Apples with Granola and Cider Cream

Ingredients

cinnamon-sugar mixture, to taste
4 large apples (reds, goldens, Braeburn or Fuji)
1/2 cup dried cranberries
4 cups granola
8 tablespoons melted butter, plus extra for buttering dish

Cider Cream:
1 cup apple cider
1 cup whipping cream

Directions:

Generously butter 9x9-inch glass pan or 8 large ramekins. Sprinkle bottom of pans with cinnamon-sugar, reserving some for later use. Peel, halve, and core apples. Maintain shape of apple half and place in dish. Sprinkle tops of apples with more cinnamon-sugar and dried cranberries. Pour 1/2 cup granola on each apple half. Pour melted butter onto granola. Cover with foil and bake at 350° for 45–60 minutes. Serve apples topped with Cider Cream and a dash of cinnamon.

Cider Cream:
Boil cider until reduced to 1/4 cup. Cool. Beat cream until stiff. Blend in cider syrup.
