Coconut Broiled Oatmeal Cake

Ingredients

1 1/2 cups boiling water
1 cup old-fashioned oats
1/2 cup butter, softened
1 cup sugar
1 cup firmly packed brown sugar
2 large eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon nutmeg

Frosting:
1/2 cup butter, melted
1 cup firmly packed brown sugar
6 tablespoons cream
1 cup chopped walnuts
1 cup flaked coconut

Directions:

Preheat oven to 350°; lightly grease a 9x13-inch baking pan. In a mixing bowl, combine water and oats; let stand 15 minutes. In a mixing bowl, cream together butter and sugars. Add eggs and extract. Stir in oats and remaining ingredients. Pour mixture into prepared pan; bake 30–35 minutes.

Frosting:
In a mixing bowl, combine ingredients. Spread onto hot cake. Place under broiler until bubbly.
