Spinach Bruschetta with Feta Cheese

Ingredients

24 loaves French bread
3 cups garlic peeled
12 cups plus 3 tablespoons olive oil divided
24 pounds fresh spinach torn or coarsely chopped
1 1/2 cups balsamic vinegar
salt and cracked pepper to taste
3 pounds feta cheese cumbled (about 3/4 cup)

Directions:

1. Cut the bread into 3/4-inch to 1-inch slices, and arrange in a single layer on a baking sheet. Toast under a preheated broiler until light golden brown. Then turn the slices over and lightly toast the other side. Rub one side liberally with the garlic, and brush with 1/2 cup of the olive oil.

2. Place 2 tablespoons of the remaining olive oil in a large skillet over medium-high heat. When the oil is hot, add the spinach and stir to coat. Cook, stirring constantly, for about 2 minutes, or until the spinach is wilted.

3. Combine the remaining 1 tablespoon of olive oil with the balsamic vinegar and drizzle over the cooked spinach, tossing to mix. Sprinkle the mixture with salt and cracked pepper to taste.

4. Divide the dressed spinach among the prepared slices of toast. Sprinkle evenly with the feta cheese and serve immediately, preferably while the spinach is still warm.
