Basic Bruschetta

Ingredients

1 loaf French bread
2 cloves garlic peeled
1/2 cup olive oil
6 firm ripe tomatoes such as Roma or plum, thinly sliced
6 slices mozzarella cheese cut into quarters
salt and cracked pepper to taste
6 leaves ffresh basil shredded

Directions:

1. Cut the bread into 3/4-inch to 1-inch slices, and arrange in a single layer on a baking sheet. Toast under a preheated broiler until light golden brown. Then turn the slices over and lightly toast the other side. Rub one side liberally with the garlic, and brush with the olive oil.

2. Top each of the prepared slices of toast with tomato slices, overlapping as needed to fit. Top with a square of cheese, folding to fit if necessary. Sprinkle lightly with salt and pepper to taste.

3. Briefly place the bruschetta under the broiler to melt the cheese, warm the tomato, and re-crisp the toast. Sprinkle with the basil and serve immediately.
