Cream the butter and sugar in a mixing bowl until light and fluffy. Beat in eggs. Add flour, baking soda, and cream of tartar and mix well. Mix in the flavorings. Roll half the dough at a time on a floured cloth. Cut into circles and place on a cookie sheet. Bake at 350° for 10–12 minutes or until light brown. Cool on cookie sheet for several minutes. Remove to wire rack to cool completely. Frost with Cream Cheese Frosting. Decorate with sprinkles or as desired.
Cream Cheese Frosting:
Beat cream cheese and butter in a mixer bowl until fluffy. Add powdered sugar and vanilla and mix well. Add a small amount of cream or milk, if needed, to make of spreading consistency. Tint as desired with food coloring. Yields enough to frost 7 dozen cookies.
