Potato Bisque

Ingredients

2 medium onions, diced
1 1/2 cups diced celery
2 tablespoons margarine
8 potatoes, diced 1/2 inch
2 cups water
4 chicken bouillon cubes
3 cups milk, divided
4 tablespoons cornstarch
2 tablespoons salt, or to taste
1 sprinkle of chopped parsley

Directions:

Fry onions and celery in margarine. Add potatoes, water, and bouillon cubes; cover and cook 15–20 minutes until potatoes are tender. Add 2 1/2 cups milk and bring to a boil. Mix 1/2 cup milk with cornstarch. Pour into pot, add salt, and stir well. Cook 3 - 5 minutes more to thicken. Sprinkle with parsley
