Light and Healthy Bean Soup

Ingredients

1 (16-ounce) can seasoned tomato
1 (14-ounce) can chicken broth
1 cup salsa
2 cups water
1 (8-ounce) can corn
1 (16-ounce) can garbanzo beans, rinsed and drained
1 (16-ounce) can kidney beans, rinsed and drained
1 (15-ounce) can black beans, rinsed and drained
1 large onion, chopped
1 clove garlic, minced
1 medium green pepper, chopped
1/2 teaspoon ground thyme
1/2 teaspoon oregano leaves
1/4 teaspoon basil leaves, crushed slightly
1/4 cup cilantro, chopped
1/2 cup uncooked white rice

Directions:

Put all ingredients into slow cooker. Stir. Cover and cook on low 6–8 hours. Serve with warmed tortillas or fresh, crusty bread.
