Cream of Corn Soup


Serves: 5

Ingredients

2 strips bacon, finely chopped
2 tablespoons finely chopped onions
2 cups frozen or fresh corn
2 tablespoons butter
2 tablespoons flour
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper
2 cups light cream

Directions:

Fry diced bacon until crisp; put aside and sauté onion in drippings until soft. Put corn through chopper; add to bacon and onion. Add butter and then the flour; cook slowly for 3 minutes. Add milk, salt and pepper and cook until thickened, then add cream and heat until smooth.
