Pumpkin Cheesecake

2 cups Oreo Cookies, crushed
5 tablespoons butter
1 1/2 cups canned pumpkins
3 eggs
1/2 cup sugar
1/2 cup brown sugar
*OPTION: substitute 1 cup agave for both sugars
1 1/2 teaspoons cinnamon
1 pinch cloves
3 (8-ounce) packages cream cheese, softened
1 tablespoon cornstarch


Mix together Oreos and melted butter and press into a 9- or 10-inch spring form pan.

Mix remaining ingredients together with an electric mixer. Pour over crust. Bake 50-55 minutes at 350°F. Remove from oven and run a knife around the entire rim of the pan. Cool thoroughly at room temperature, then refrigerate overnight.
